Sparkling wine from France

Monks - not just Dom Pérignon - loom large in the history of French bubbles. Yeast trapped in a poorly filtered and suddenly fizzing bottle of altar wine inspired Blanquette de Limoux. Harnessing the natural process of secondary fermentation in the bottle are Alsace, the Loire, Burgundy and, of course, Champagne.
