Domaine Jean-Paul and Benoît Droin

Domaine Jean-Paul & Benoît Droin can trace their history back to 1620. Today, father Jean-Paul has handed day-to-day running of this 24 hectare estate over to son Benoît. The domaine has a wonderful collection of vineyards including premiers crus Vaillon, Vaucoupin, Montmains, Montée de Tonnerre, and Mont de Milieu, and grands crus Valmur, Vaudésir, Blanchot, Grenouilles and Les Clos.

Benoît has reduced the oak influence, seeking to develop flavour from the oxygen exchange a wooden barrel provides without marking the wine and obscuring the mineral aromas of Chablis with the vanillin scent of new oak, which is kept to a minimum.
