Domaine Pinson are a well-respected Chablis domaine currently run by brothers Laurent, who looks after the vineyards, and Christophe, who is in charge of the cellar. The 14ha domaine comprises 2.2ha Chablis, premiers crus 0.34ha Vaugiraut, 1.05ha 65 year old vines in Montmains (near Forêt), 0.68ha Forêt, 0.5ha Fouchaume (Vaupulent), 4.25ha of Mont de Milieu and 2.25 ha of Les Clos.
There are four permanent workers for 14ha of vineyard. There are no weedkillers or insecticides used, the vineyards are ploughed. In the cellar the grapes are handharvested, they are sorted in the vineyard manually and again on a sorting table in the winery then whole-bunch pressed in a pneumatic press. The Chablis is all tank fermented and matured.
The premiers crus are fermented 10-15% in new oak, 85-90% in stainless steel. In January wines are assembled and then matured in barrels averaging 4 years old for 8 months. No lees strirring occurs and the wines are bottled in September. Grand Cru Les Clos spends a year in barrel with 20% new oak and is bottled in January.
