This 7ha domaine in Savigny-lès-Beaune is run by sisters Francine et Marie Laure Serrigny who took over in 1995 after their father passed away. They have red and white vineyards principally in Savigny, with a little Aloxe-Corton.
Their wines are notable for their exquisite, gentle mouthfeel and their length of flavour. In the cellar, they destem but do not crush the grapes, the vatting lasts about 25 days with one pumpover and one punchdown a day. The wines are aged for 18 months in pièces and filtered before bottling.
They have 1.9ha of Savigny in the lieux-dits of Aux Fourches, Aux Champs des Pruniers, Les Prevaux et les Planchots de la Champagne, averaging 40 years old.
They created their cuvée Serrignyssime from 2011 selecting their best situated and oldest parcels of village vineyards which comprise Aux Fournaux, Les Pimentiers, Les Grands Picotins, Les Petits Picotins. This equates to 1.2ha and the vines average 60 years.
Premier Cru Peuillets has vines of 80 and 25 years of age averaging 40 years, faces east/north-east, and the soil is gravelly with limestone. It produces a balanced and powerful wine.
Premier Cru Dominode comes from 90 eyear old vines, faces east/north-east and is planted on sandy soils which, with the old vines, gives a beautifully silky-textured wine, gentle in the mouth yet with a long, persistent finish.
