The Masseria Monaci estate at Copertino is the creation of the wise and talented oenologist Severino Garofano, who bought the old estate of Bacile di Castiglione and restructured the vineyards. His Copertino is one of the best value buys in Puglia and Le Braci one of the finest. Severino, now helped by his son Stefano, has been a huge influence for good in Puglia, though he is originally from Campania. He persuaded the Vallone sisters to create Graticciaia and also advised Candido.
