This domaine was formerly known as Domaine Font Caude and is based at Lagamas in L'Herault, with vines planted around the village of Montpeyroux. Owner Alain Chabanon, the son of two teachers, studied agriculture at college and took the love of wine instilled in him by his father into two years of working with famed winemaker Alain Brumont of Château Montus and Domaine Bouscassé.
In the late 1980s he decided to strike out on his own, purchasing vines between Jonquières and Montpeyroux, and made his first vintage in 1992. He now owns 17 hectares of vines in the communes of Jonquières, Saint-André, Lagamas, Saint-Saturnin and Montpeyroux where the arid, stony soils of the Larzac terrace and the cleansing Tramontane and Autan winds help him to grow concentrated, healthy berries. Vermentino and chenin blanc are grown for whites, while reds are made from mourvédre, merlot, carignan, syrah and grenache. Even though the domaine is certified organic the conditions here mean that he has to do very little to keep his grapes healthy and when hand-harvested the bunches are put into small baskets to keep them as undamaged as possible until they reach the winery.
Once there the grapes are sorted, and the vats are gravity-fed to ensure gentleness of treatment as much as possible. Only natural yeasts are used for fermentation and the top cuvées are neither fined nor filtered.
