Husband-and-wife team Maria Tamiolakis and Dimitris Mansolas both qualified oenologists met in France. He is from north Greece and worked as an agronomist for Kir-Yanni. She studied in Bordeaux, and took over her mother's family vineyards at Houdetsi near Heraklionin 1996.
In 1998 they planted kotsifali and mandilaria on north-facing vineyards at 450metres and up, protected from the fierce African winds by the mountains. They get as much rain as Bordeaux but it is much hotter. They cool grapes on arrival and sort in both vineyard and cellar.
