Pierre Bories, the dynamic owner of Château Ollieux-Romanis in the Corbières, is determined to create world-class white wines from the Languedoc. His flagship white wine, Cuvée Nuit Céleste (previously called Cuvée Prestige), is something he has been perfecting over many vintages. Much of the Languedoc has the potential to make great white wines. The Corbières hills in the south of France are better known for red wines, yet whites can prosper here too, taking full advantage of limestone-rich soils and cool breezes that dampen the vines’ ardour. For this wine, Pierre uses Rhône grapes, principally roussanne, which he keeps in barrel on the yeast lees for about nine months before bottling, creating a rich, creamy and complex white. It works brilliantly with food, and we recommend it wholeheartedly.
