Archetypal aligoté, dry, fresh, firm and mineral wine with green-apple aromas. Made from 50% Marsannay and 50% from Echevronne in Hautes Côtes. It was matured 12 months in foudres of 40hl and 80hl and four months in stainless steel tanks.

Sylvain Pataille, Bourgogne Aligoté Auvonnes Au Pépé 2019

Made from a vineyard of just 0.10 ha planted in the 1930s, this is a medium-bodied all-rounder combining freshness and minerality in a measured and proportionate way. Yields were just 20hl-ha. Matured for 12 months in 350hl barrels and 6 months in stainless steel tanks. Please note: six bottles only per member.

This aligoté is made from 0.3ha planted between 1932 and 1961. It is full-bodied and broad, with impressive density of flavour whilst retaining aligoté’s inherent freshness. Yields were only 20hl-ha, and the wine was matured for 12 months in 350hl barrels and 6 months in stainless steel tanks. Mixed case only.

Made from 0.18ha planted between 1932 and 1935, this is a wine of controlled power, with a lean muscularity and a long mineral finish which is dry but not austere. 20hl-ha. Matured for 12 months in 350hl barrels and 6 months in stainless steel tanks. Mixed case only.

Sylvain Pataille, Bourgogne Aligoté La Charme Aux Prêtres 2019

Made from 0.34ha planted 1949. Uncompromisingly firm and dry, it is the most linear and sinewy of Pataille's aligotés. Its searing minerality and impressive length of flavour mark it out as a special wine. 20hl-ha. Matured for 12 months in 350hl barrels and 6 months in stainless steel tanks. Please note: six bottles only per member.
