Classically light with a tingling prickle of acidity, this version brings us clean-tasting green apple and grapefruit flavours coupled with crisp lime acidity and a lively finish that incorporates traces of mace.

Needs some nice Basque fish as an accompaniment. Distinctive, bone dry and salty on the finish. This may not appeal to those who prefer fruit-driven wines but why not try something different? 16/20
