Of all Spain's varied wines, few are as "left field" as those from the Basque country and txakoli is quite rare outside that region. It is a frizzante-style white wine designed to be drunk young. Classically light with a tingling prickle of acidity, this version brings us clean-tasting green apple and grapefruit flavours coupled with crisp lime acidity and a lively finish that incorporates traces of mace.

Interesting salty/herbal aroma, sour, earthy and unusual – in a good way. Earthy on the palate, too. Richer than what I think of as typical Txacoli, which can be quite lean. Needs some nice Basque fish as an accompaniment. Distinctive, bone dry and salty on the finish. This may not appeal to those who prefer fruit-driven wines but why not try something different? 16/20

This incarnation comes from further inland, near Rioja – it's fuller bodied than some, and doesn't have a spritz. It's still utterly delicious though, with a brisk, marine aroma, softening on the palate slightly to give juicy green apple flavours. Fresh and vibrant, drink it in its youth. 92/100

The enamel on your teeth will certainly welcome this generous, fuller-textured wine. Made from hondarrabi zuri, salinity gives way to flinty minerality, with plump apple, juicy grapefruit and a revitalising crispness.
