Blanc de Rosé Xinomavro, Thymiopoulos 2009
A compelling and singular Greek wine from a high-altitude vineyard in Fytia. This full, unctuous wine was originally a rosé but has lost the majority of its colour, and now offers a deep rose-gold colour (hence ‘blanc de rosé). The nose is intense with mandarin and smoky, cedary notes and light oxidative character, with food-friendly grip on the palate. The xinomavro failed to complete its initial fermentation due to the bitter cold during the winter of 2009, leaving 38g/l of residual sugar. Rather than kick-start fermentation, winemaker Apostolos Thymiopoulos left the wine on its yeast lees in tank until 2015, where it gained weight and complexity. Fermentation never restarted, so in 2015 he added a portion of ripe malagousia to the wine and transferred it to 500-litre oak barrels to continue fermentation for the next two years. Following this, the grapes were pressed and fermented to dryness before maturation for a further two years before bottling in 2020. A fascinating and unmissable wine.
