A hedonist's dream from one of the great Champagne houses. There are many technical factors that have led to Bollinger`s richer, yet subtle house style. Firstly, a large proportion (85%) of the grapes are from grand cru vineyards, and 60% of the blend is pinot noir both of which contribute towards the generous and concentrated style of the wine. A proportion of the wine (approximately 15%) underwent its first fermentation in oak barrels, adding further complexity, and around 50% of the non-vintage blend is made up of reserve wines, a higher-than-average proportion, that contributes to the consistency and depth of flavours of this Champagne. Bollinger is also allowed to age in cellar, on the lees, for a minimum of 36 months, (twice the legal minimum) before disgorgement, allowing these lees-y, brioche flavours to develop and gain balance. All of this care and attention has cemented the popularity of this wonderfully deep yet elegant, successful house style. We were so pleased to see this enduring favourite crowned a Wine Champion yet again this year: it is the product of more than a century of working with the small house of Alfred Gratien, and seeing it triumph so consistently is a testament to the quality that has resulted.
