Cuevas de Arom Tuca Negra Garnacha, Campo de Borja 2017
An exquisite garnacha from Spain, from very old vines grown at 700 metres altitude in Campo de Borja, a region near Zaragoza in the north east. Here Fernando Mora is on a mission to make the very best garnacha and in our opinion he is overdelivering. Tuca Negra is intense, sensuous and smoky, and a fine wine to watch.

Cuevas de Arom
Cuevas de Arom is a project put together by three friends who want to show just how good the distinctive, dry-farmed garnacha grapes of the Campo de Borja region of Aragon can be. Fernando Mora MW, Fernando Larasa and winemaker Mario López source their garnacha fruit from the members of the Santo Cristo cooperative where Mario is winemaker, bringing the harvest into a bijou winery built into a huge old concrete tank in the cooperative cellars, evoking the traditional cave cellars of the region, and leading to Cuevas de Aroms t-shirt logo ‘we produce high-altitude garnacha underground’. Here they use open-topped fermentation tanks and apply different maceration times to grapes from the various terroirs, and generally use whole bunches in the fermentation. Ageing takes place in a mixture of vessels, from concrete tanks and concrete eggs to barrels and foudres.
