Domaine des Sénons, Gaudii Valles Chardonnay 2022
The vineyards around Sens, 70km north of Chablis, date from Roman times and were well regarded in the 16th century. Global warming has provoked a renewed interest in the region. The best vineyards have been replanted by Domaine des Sénons and a wonderful winery has been built. This is firm, mineral chardonnay which is fresh but ripe. Fermented 40% in barrel and 60% in tank so as not to mask the minerality.
