Williams and Humbert

Williams and Humbert, founded in 1877 by Sir Alexander Williams and Arthur Humbert, were originally located in the heart of Jerez but in 1994 purchased a large, modern bodega on the outskirts of the city. The building is the biggest wine cellar in Europe at 180,000 m2.

These days the company is wholly owned by the Medina family and the two latest generations of Medinas work side by side to produce a range of sherries including the famous Dry Sack brand. They also maintain a keen interest in horses, which is traditionally an Andalucian passion, and visitors to the property are often treated to a display of equestrianism.

The excellent As You Like It bottling came about as the company prepared for its big move to the new bodega. Before transporting their soleras to the new premises the cellarmaster was instructed to blend the different barrels to facilitate transport. However, one particular solera of 27 butts included wine that stood out head and shoulders above the others, so he kept it intact and untouched until three years ago. This is As You Like It.

A beautiful golden amber colour, it is fortified to 19 per cent alcohol and is bottled unfiltered (en rama) in its most natural state. A truly unique wine from 100 per cent palomino grapes, the delicate and elegant flavour has hints of orange peel and pecan nuts, with complex aromas and flavours and a slightly salty finish. Dry and deliciously satisfying it is a great aperitif and will accompany many dishes, including cured ham, chorizo, salami and hard cheese such as Comté or aged gouda.

picked out by TimSykes on a visit to Williams & Humbert in the company of sherry supremo,Peter Dauthieu, this classic, golden bronze Amontillado made from Palomino issweetly fragrant with all manner of candied apricot, vanilla oak and caramelswirling around, but when you taste, all that deceptive sweetness morphs into arichness of texture followed by a bone dry salted caramel finish with a smokyedge to it. Hugely impressive as a drink on its own or with chorizo or jamónibérico.

Amontillado is a fino or manzanilla sherry that has beengiven further age in an oxidative way, without flor. Hence the colour will belighter than an oloroso, but darker than a fino or manzanilla. A gorgeous amberin the glass, give this a swirl and aromas of citrus and nuts will leap fromthe glass. Tangy with lip smacking acidity and a lovely salinity, it's intense,complex and fully dry. Serve it slightly chilled with jamón, hard cheeses,olives and almonds. An elegant way to start the evening.

Beautiful orange-ochre colour and equally beautiful and complex aroma of bitter orange, walnuts, smoke, bitter toffee. Just a slight whiff of alcohol. This is bone dry, intense and long with that bitter-orange sourness that some might find challenging. Complex and nutty and much more sophisticated and harmonious than many Amontillados at 12 years old. The alcohol is very well integrated. But beware, it really does taste bone dry and is thus quite demanding. Should be great with steak. Incredible length. Very good value.
