Hidalgo
Bodegas Hidalgo is one of the few remaining family-run businesses based in Sanlúcar de Barrameda, having been founded in 1792. It specialises in single-solera and single-vineyard bottlings, and crafts excellent manzanilla (the dry, flor-influenced style of sherry that can only be produced and aged in the coastal town of Sanlúcar).
Hidalgo is one of the few bodegas to craft a pasada style, which is essentially an aged manzanilla, of around seven years old, where the veil of flor (which protects the wine against oxidation) has faded, resulting in a manzanilla with a deeper colour and mature flavours.
