A complex aromatic interplay of roasted nuts, citrus peel, and a faint salinity, is underpinned by subtle oxidative notes and the palate of this single-vineyard sherry is equally compelling: rich yet refreshing, with layers of hazelnut, caramel, and a chalky minerality. La Bota de Palo Cortado 121 is a remarkable interpretation of the Palo Cortado style, with finesse, complexity and purity. Produced from a single-vineyard in the Pago Miraflores region of Sanlúcar de Barrameda, sourced from very old vines from a selection of grape must harvested in 2010. It was then aged in sherry butts and in barriques filled almost all the way up (a tocadedos) in order to avoid excessive oxidation. For this bottling, they selected only the barrels which showed the utmost balance and delicacy. An amazing pairing to Japanese or Indian cuisine and best served at 12-14º C in moderately large stemware.
