Beautifully fresh, finely tuned Champagne which is bottled at a lower pressure, resulting in tiny, gentle bubbles and making it perfect for food. From a mixture of grand cru and premier cru vineyards in the Côte des Blanc, and disgorged in March with only 5g-l dosage, the 2016 is expressive, creamy and mineral.

Pierre Gimonnet
Côte des Blancs, as the name suggests, is all about chardonnay, and all Gimonnet’s wines are 100% chardonnay. The Gimonnets are based in the village of Cuis but also have vineyards in the premier cru site Vertus and in the grand cru villages of Cramant, Chouilly and Oger, with some 40 plots of land in all and a total of 28 hectares.
Olivier and Didier Gimonnet play on the different variations of terroir within these sites to give each of their Champagnes a true sense of place. Common to all their Champagnes however is finesse, minerality, elegance and freshness.
The fruit for the non-vintage Champagne comes from Cuis, which tends to make a delicate fruity style of wine. What is unusual here is the reserve wine which is added, drawn from several vintages, and kept in bottle rather than tank or vat. The result is a wine of great complexity and length of flavour.
