Šipon Furmint, Dveri Pax 2021

2.000000000 star rating 1 Reviews
This is a spicy, crisp and dry Slovenian take on furmint, which shows white berry and lanolin on the nose. The palate is focused and fresh with notes of melon, lemon and elderflower. Cloudy lemonade on the finish makes this tart and delicious.

Dveri Pax

The Benedictine monks from Admont Abbey, across the border from Graz in Austria, have been producing wine in today's Slovenia since 1139. The name derives from the Slovenian for door (dveri) and the Latin word for peace (pax).

When Slovenia regained independence, they were able to reclaim and rebuild their old vineyards from 2001 onwards, investing considerable amounts of effort and money because the monks take an enviably long-term view and have good resources. A spanking new cellar was completed in 2007.

The estate is 320 hectares in size with 73 of those under vine currently. Winemaker Danilo Flakus followed Erich Krutzler (married to Elin Pichler of the top Austrian estate FX Pichler) who helped to establish the Dveri Pax reputation for excellent wines from its foundation, first as a consultant and then as manager and winemaker.

Benedictine monks at the Admont Abbey have been making wine here since 1139 and reclaimed their vineyards following Slovenian independence in 1991. Since then they’ve replanted and modernised their wine-making and this, from the furmint grape (known as šipon here), is a fine example. It’s beautifully textured, with elderflower and lemon sherbet notes and a stony, mineral finish.
