Each year the best barrels from the best vineyards owned by Château de Beauregard from most of the communes of Pouilly-Fuissé are chosen for Grand Beauregard. They are then matured another six months compared to the normal crus, totalling about 18 months in barrel. This is a complete expression of this Burgundy appellation.

A successful unoaked blend of three excellent village vineyards, Pargues, Cartes and Bas de Chapelot, this is a little rounder than usual with honeyed character from a hint of (not unattractive) botrytis, yet still with good tension and grip.

Domaine de la Rochette Mont Sard, Mâcon-Bussières 2022

This is a rich, gentle wine with a natural concentration coming from 1.5ha of vines principally planted in the 1930s, 1945, 1947 and a little in the 1980s. Fermented and matured for seven months in a combination of a wooden vat (43hl) and 228-litre barrels. Its satisfying richness makes for a happy marriage with Parmesan-and-lemon-crusted chicken breasts or firm white fish. The wine won’t be fazed by the umami depth or the lemony zing.

Ripe but fresh and beautifully balanced Mâcon from vineyards above the amphitheatre of Fuissé in southern Burgundy. Its inherent freshness would work beautifully with a luxurious fish pie or a crunchy coated fish cake served with a buttery sauce like hollandaise or beurre blanc.
