En rama is sherry in its raw, most delicate state, as if drinking directly from the cask. It is deeper in colour than the normal bottling of Tio Pepe, more aromatic and with a smooth, almost soft texture, and a very long finish.
Though fino Sherry's normal bottling process extends shelf life, ensures stability and reduces bottle variation, it also removes some of the wine's colour, texture and flavour. For En Rama, treatments are minimised to allow all that lovely flavour – and even some yeast – into the bottle. That means that this is the next best thing to tasting sherry straight from the cask!
It is bottled every April when flor (yeast) activity is at its peak, giving it a deeper colour and sometimes slightly cloudy appearance thanks to the yeast cells. The result is sensational: a more aromatic fino with intense yeasty aromas and a fuller, rounder palate.
2019 marks the 10th anniversary of this wine and is amongst the best we have tasted. En Rama has much more flavour than most sherries but it is less stable. We recommend storing it below 12°C and enjoying it within a year of bottling (i.e. by March 2020). Serve cool, about 10°C, and enjoy!
