Spicy bouquet and full, dry flavour which grows in the glass. From a steep vineyard in the foothills of the mountains close to the Slovenia/Austria border, this is a classic Styrian white.

The Benedictine monks from Admont Abbey, across the border from Graz in Austria, have been producing wine in today's Slovenia since 1139. The name derives from the Slovenian for door (dveri) and the Latin word for peace (pax). When Slovenia regained independence, they were able to reclaim and rebuild their old vineyards from 2001 onwards, investing considerable amounts of effort and money because the monks take an enviably long-term view and have good resources. A spanking new cellar was completed in 2007. The estate is 320 hectares in size with 73 of those under vine currently. Winemaker Danilo Flakus followed Erich Krutzler (married to Elin Pichler of the top Austrian estate FX Pichler) who helped to establish the Dveri Pax reputation for excellent wines from its foundation, first as a consultant and then as manager and winemaker.

grape makes lighter more delicate styles across the border on Stajerska’s steep
vineyards in north west Slovenia. Benedictine monks at Admont Abbey make
this excellent sipon (furmint’s Slovenian name). It does have high acidity,
which is the nature of the grape, but softer than many Hungarian
examples. Steely vibrant with poised grapefruit flavours and great length

"Colour: Spritzy, very pale limpid gold with a streak of green.
Aroma: Distinctive, grassy and floral, lemon, grapefruit, minerals, smoke and something like warm bread or honey.
Taste: Medium-bodied, very dry, brisk acidity and a smooth texture. Flavours are subtle, some lemon and pear with a medium finish.
Overall: More floral/herbal and mineral than fruity. Lacks flavour in my opinion, a bit bland. On a positive note, a nice nose, fresh and acidic making it easy drinking. A decent midweek wine, fairly priced just not memorable."

"A delightful mix of
history (as in Austro-Hungarian history) and the most modern of winemaking. It
is ultra-sleek and fresh and when you first smell it you may wonder whether it
isn't just another cool-fermented white, but in the glass it really takes on weight,
fire and pungency, while finishing appetisingly dry. There is no hurry to drink
this, wine which is just coming into its prime. I'd keep it up to three years,
which is unusual for a wine at this price. I tasted both cork-stoppered and
screwcapped versions and much preferred the precision of the latter, about
which I wrote, ' Screwcapped version in a bordeaux shaped bottle (cf the cork
stoppered version with 0.5% less alcohol in a burgundy shaped bottle). Smoky,
pungent nose with real tension and apparent potential. More energy than the
cork-stoppered version. Smoky, just off dry. Elderflower notes. - Jancis Robinson"
