Now considered a master of Marsannay, Sylvain Pataille’s journey to Burgundian legend has not been thanks to a silver spoon in his mouth.
His family once owned 4ha of vines, but in 1905 they lost them through financial difficulties. However, after training as an oenologist in Bordeaux and working as a consultant in Burgundy (which he still does), he began his own winery. Since 2001 he has worked on his own Domaine, with 4ha owned and 14ha mainly ‘en fermage’, on 25-year rental agreements.
These vines are being converted to biodynamic cultivation, aiming for low yields in his prized pinot noir. He also makes white from aligoté and a selection of chardonnay rosé, whose skin turns pink when ripe.
