A Gold-medal winner at the 2020 International Wine Challenge, this is the best example of this style of sherry we have tasted, and a great bargain. It comes from the fine Pastrana vineyard in the Miraflores region, which has long produced the finest wines in the Hidalgo cellars. As fine, nutty manzanilla with the strength of character to stand up to all manner of dishes. Try with red-fleshed tuna, or a shellfish stew.

Bodegas Hidalgo is one of the few remaining family-run businesses based in Sanlúcar de Barrameda, having been founded in 1792. It specialises in single-solera and single-vineyard bottlings, and crafts excellent manzanilla (the dry, flor-influenced style of sherry that can only be produced and aged in the coastal town of Sanlúcar).Hidalgo is one of the few bodegas to craft a pasada style, which is essentially an aged manzanilla, of around seven years old, where the veil of flor (which protects the wine against oxidation) has faded, resulting in a manzanilla with a deeper colour and mature flavours.
"There are not many wines that stop me in my tracks after one sip, but this really did. Absolutely stunning wine with flavours that swirl and combine in the mouth, lingering for absolute ages. I can't do justice to the range of flavours, but I really would urge anyone who hasn't tried a sherry of this quality to give it a go. "Normal" wines need to cost way more than this for the same enjoyment."

"This is a special manzanilla, although it is nowhere near the camomile infusion that a “normal” manzanilla ‘should’ mirror. The Pastrana is aged for longer, and therefore is much more akin to a fino than the bone dry characteristics a manzanilla usually offers. Make no mistake, it’s a good wine - the palate is sufficiently complex, shifting from manzanilla’s initial thinness, to a salty and then nutty finish. It really is delicious and Hidalgo’s decision to focus on a single vineyard should be praised. When drunk as part of a tasting with La Gitana, La Ina and Alegria, this was markedly better. However, a recent trip to Jerez did reinforce the fact that the family reserves of vineyards generally do not follow the solera method, but rather were kept per year. This, like port or every other wine produced globally, suggests where the genuinely good stuff is."

"The nose has a typical "dusty" Sherry note, as I would describe it, but not as pronounced as in some other Sherries, with aromas of apples, nuts and a bit of smoke, but also something "cheesy", I find: like a ripe, savoury cheese, maybe camenbert or Austrian mountain cheese. On the palate, this has a light body and savoury, yeasty flavours with a certain bitterness and some saltiness, dry, but not quite as drying and "dusty" as some Sherries: it tends more towards the fruity and appley flavours."

filtered), giving immense concentration and complexity of flavour balanced by
mouthwatering acidity. Briny, yeasty and nutty, with floral hints on the

typically aged for around five years, bottled well before the protective flor
dies off, keeping it super-fresh. A Manzanilla Pasada is matured for longer, in
this case for 12 years. General manager Fermín Hidalgo described it to me
recently as the 'Gran Reserva of Manzanilla'. It's still maturing as the flor
starts to fade and the merest hint of oxidation sets in.
The result is Manzanilla-plus-plus. It's slightly deeper in colour than regular
Manzanilla, but still pale, fresh and elegant, a perfect aperitif. The further
years of development and tiny hint of oxidation add a cavernous depth of
flavour; salty, savoury, nutty, complex and umami-ish – perfect for both summer
and winter moods. The flavours take an age to fade from the palate too. - Emily Percival"

"A mouthful of a name
and an even bigger mouthful of a Sherry. Savoury and nutty, with hints of green
apple and orange zest, it is a fine match not just for cured aristocratic pig,
but also for shellfish, olives, salted almonds; even fish and chips, if you go
easy on the vinegar. The Wine Society sells it for £10.95; Waitrose &
Majestic for £12.99. That, to me, represents stunning value for one of the
world's great wines; in any case perhaps it is time to replace that stale old
bottle of Sherry that has languished on the sideboard for years with something
altogether more youthful and festive. On 25th December I shall arrange some
thin slices of jamón Ibérico on a plate (making sure they warm up to room temperature) and
serve them with Hidalgo's excellent manzanilla. I cannot imagine a finer start

Decanter World Wine Awards: Reticent, elegant and yet lively, showing tones
of mushroom, golden apple and sea salt on the nose. In the mouth it's long

complex and refined.
