White Wine from France - Roussillon
The Parcés come from further south in Banyuls where their estate is called la Rectorie. When they acquired a disused co-op cellar high up in the hills above Maury, they realised that there was a Templar building called Préceptorie de Centernach and the name got adopted. This is their top white, made from grenache gris and aged for a year in barrel. Lovely now but actually perfectly capable of ageing as well. 100% grenache gris from the Roussillon, that bit of Catalonia that is in France but which still thinks of itself as fiercely Catalan. Viticulture is as old as the hills, but historically was devoted to the production of fortified wine. There is some fabulous vineyard in the Roussillon on soils that include schist and limestone and, with less demand for fortified wine, more table wine is being produced, some of it exceptional. The potential did not go unnoticed. Investors include a good many Bordelais for example but also more locally from the Parcé family. This is dry, unfortified and goes well with fish, shellfish and white meats beautifully.
