Principal player in Bordeaux, notably the Médoc, and globe-trotter supreme, cabernet sauvignon is heroic on its own and adds class, structure and length to blends. Deeply coloured with enough tannin to assure a long life, its flavour profile includes cassis, plums and often a touch of green pepper.
