Vilmart's Coeur de Cuvée, as its name suggests, comes exclusively from the heart of the cuvée which in turns comes from their oldest vines, of approximately 60 years' age, creating a Champagne of both wonderful finesse and significant intensity. A blend of 80% chardonnay and 20% pinot noir, all from premier cru sites in Rilly-la-Montagne, this has an expressive, spicy aromatic of ginger biscuits, white peach, lime peel, and apple. There is real flair and complexity on the palate, with a salty-mineral core which extends on the long, energetic finish.
