Wildman Wine Astro Bunny South Australia Pét-Nat 2025
Tim Wildman is a British born Master of Wine who specialises in Australian wine and Pét-Nat (sparkling wines fermented only once, in bottle). So who better to turn to for an Australian Pét-Nat? This may look funky but the wine is seriously well made. A blend of fiano, nero d'Avola, malvasia bianca and Canada muscat, which is unusual but as is the genius of Wildman, it works a treat! The resultant wine is a delicate pink colour, bottled on its lees, which adds creaminess to the texture (and an intentional haziness in the glass/bottle). Due to the vintage conditions the 2025 is a little fuller and fruitier than previous releases, with a lovely crushed strawberry and raspberry on the nose, which is joined by a little hint of the archetypal floral lift and spiced orange peel. The palate is fresh and lifted and full of life, with a lovely crsipness and great structure which supports the juicy fruit flavours. Delicate red berry and apricot, with a lovely pure minerality on the back palate, finishing with strawberries, cream and meringue notes. It is recommended that you delicately tip the bottle before opening, to ensure the fine lees are mixed into the wine, in order to experience the full texture and flavour of this deliciously refreshing fizz.
