Dryness in premium fizz is governed by the amount of sugar added to the wine that fills the gap left by the disgorgement of spent yeast from the bottle. Brut Champagne is dry, extra-brut more so, and brut nature or zéro dosage has no added sugar at all. Confusingly, extra-dry and demi-sec are sweeter!
