With this dessert it isn’t just the sweetness that the wine has to contend with but the sharp citrus character too. Something about the tangy, marmalady flavour or noble-rot affected wines makes them suitable candidates. Sauternes and Barsac, or their country cousins, Sainte Croix du Mont and Monbazillac would be splendid, or opt for liqueur muscat or Vendange Tardives wines from Alsace.
