Crémant d'Alsace NV, Frederic Mochel
This small 10-hectare estate is run by Guillaume Mochel and has recently become certified biodynamic as well as organic. Spending 32 months on its yeast lees prior to disgorgement the wine has taken on complex brioche and toasty notes as well as an attractive creamy texture. There is lots of finesse and is incredibly good value.
