Lambton & Jackson's local cure celebrates the art of smoking salmon, and the unique flavour owes much to their dry salting process and the exquisite blend of oak and beech used to smoke this succulent fish. Darcy Lambton and Sean Jackson decided to establish their smokehouse in 2014 and are already supplying Michelin-starred restaurants from the historic foodie hub of Maldon, long famous for its sea salt and oysters.
