Taittinger's flagship prestige Blanc de Blancs cuvée is only made in great years and from the best grapes of the harvest. With chardonnay sourced from the five prestigious, grand cru villages of Avize, Chouilly, Cramant, Mesnil-sur-Oger and Oger, it is characterised by its great precision and intensity, yet finesse. With 95% of the blend fermented in stainless steel to keep that precision, 5% is fermented in oak to add a little seasoning to the final blend. The wine spent 10 years in chalk cellars before disgorgement. On release, it has immediate appeal with an extremely complex perfume of brioche, camomile, green apple and salted lemon, continuing on the bright, tight palate lifted by welcome acidity and the pinprick mousse. A long orchard fruit, almond and patisserie-scented finish really points to the quality of this wine, and hints at the promise it will offer your patience if you choose to age this further.
