Blanc des Côteaux, Thymiopoulos 2023
White Wine from Greece - Greece
A unique blend of 50% malagousia, 25% assyrtiko, 20% vidiano and 5% aidani all from certified organic vineyards on the slopes of Mount Vermio. The malagousia, vidiano and aidani are all vinified on the skins in clay amphorae before pressing and maturation on the yeast lees for 10 months. The assyrtiko is whole-bunch pressed and fermented in partially new French oak where the wine is then matured for a year before blending. The result is a fantastic, complex, amber-coloured wine with intense aromas of citrus pith, nutmeg and herbs. The palate is rich yet hugely enlivening with real texture and grip.
