The Brindisa bellota ham is made from pigs of 75% iberico breed fattened on acorns on the dehesa of Extremadura for up to 12 weeks. The hams are then expertly cured in Guijuelo, Salamanca for between 30 and 36 months and is then hand-carved by a master carver. The ham is sweetly nutty in flavour with a lovely balance and a long, complex finish.
