With deep, almost opaque colour and a yellow tinge, this has a mature figgy bouquet and bags of intense, ripe, dried-fruit character on the palate. Sweet but not cloying and with a very long, lingering finish. Superb.

Williams and Humbert

Williams and Humbert, founded in 1877 by Sir Alexander Williams and Arthur Humbert, were originally located in the heart of Jerez but in 1994 purchased a large, modern bodega on the outskirts of the city. The building is the biggest wine cellar in Europe at 180,000 m2.

These days the company is wholly owned by the Medina family and the two latest generations of Medinas work side by side to produce a range of sherries including the famous Dry Sack brand. They also maintain a keen interest in horses, which is traditionally an Andalucian passion, and visitors to the property are often treated to a display of equestrianism.

The excellent As You Like It bottling came about as the company prepared for its big move to the new bodega. Before transporting their soleras to the new premises the cellarmaster was instructed to blend the different barrels to facilitate transport. However, one particular solera of 27 butts included wine that stood out head and shoulders above the others, so he kept it intact and untouched until three years ago. This is As You Like It.

The amazing acidity means that it's not in the least bit cloying, despite the whack of sugar.
