Since departing Domaine Paul Jaboulet Ainé, La Lagune and Château Corton C., Caroline Frey officially took over the Cave Benoît Dorsaz estate of six hectares in spring 2025. Benoît wanted to entrust the estate to someone who shared similar philosophies and values and who would champion the indigenous grapes he worked with. Having made wine as a side project for over 10 years, she wants to fully embrace and pursue her love affair with the petite arvine and indigenous grapes of the region. This petite arvine comes from plantings from 1930 and 2001 in the commune of Fully. The terraces are steep and the soil is complex with principally loess and gneiss. Aged exclusively in stainless steel, with some lees ageing to add some texture, this is pure and focused white wine with an attractive textural component with white pepper and a saline finish.
