Delamain manage this XO for us from some of their best barrels. It has an average age of 25 years in cask, and has incredible complexity and concentration as a result. As this warms in a large glass the aroma is heady with peach, apricot, fresh shortbread and almond, with intensity on the palate and long finish.

The grapes that are grown to make Cognac are grown in a particular region of France, just north of Bordeaux in the south-west. It’s made from ugni blanc and colombard mainly, and these grapes are grown and made into a light wine, which is then double-distilled. Cognac always uses a Charentais pot still that has a swan’s neck. The spirit is then aged in French oak for a number of years to add richness and complexity, and our Society’s Exhibition Cognac is an ‘XO’ style. ‘XO’ means that it’s extra old, and by law the minimum age within the blend must be ten years, but here it’s actually an average of 25 years. Delamain make this for us and it’s an incredibly complex and rich spirit. Lots of apricots and almonds and shortbread biscuits on the nose. Warming peach and walnut flavours on the palate. This is a great tipple.
