Peller are a leading producer of ice wine, and this Canadian gem is worth seeking out. Fully sweet, with pure fruit flavours, it's an absolute treat with anything sweet or a cheese plate. Icewine is a rare dessert wine produced from the juice of naturally frozen grapes that have been left on the vine well into winter where temperatures drop to as low as -10°C. Once picked the grapes are pressed while still frozen, producing tiny quantities of intensely sweet juice. Peller Estates are based in the heart of Ontario`s Niagara Peninsula and champion vidal, Canada`s principal icewine grape. Their Signature Series is fermented at low temperatures and aged in stainless steel to preserve pure fruit expression.
