Wildman Wine Astro Bunny South Australia Pét-Nat 2024
Tim Wildman is a British born Master of Wine who specialises in Australian wine and Pét-Nat (sparkling wines fermented only once, in bottle). So who better to turn to for an Australian Pét-Nat? This may look funky but the wine is seriously well made. A blend of 70% fiano, 10% nero d'Avola and the remaining 20% made up of both malvasia bianca and Canada muscat, a very curious blend indeed! The resultant wine is a delicate pink colour, bottled on its lees, which adds creaminess to the texture. The nose is delicately floral, with notes of apricot yogurt, bright raspberry and spiced orange peel. The palate has a lovely delicate foam, rather than an aggressive mousse, making it lightly sparkling rather than Champagne sparkling. Delicate red berry, strawberry, blossom and apricot, with a delicately herbal note combine to make a lovely, refreshing and delicate sparkling wine. Finishes with strawberries, cream and meringue notes. It is recommended that you delicately tip the bottle before opening, to ensure the fine lees are mixed into the wine, in order to experience the full texture and flavour of this deliciously refreshing rosé.
