Blue Cheeses

Avoid reds which really don’t work with blue cheese. Instead, emulate the classic French classic pairing of Roquefort with Sauternes, which demonstrates just how well the saltiness of the cheese goes with the sweetness of the wine. Fine Sherries work exceedingly well too.
