Chardonnay and chenin blanc come from the foothills of the Pyrenees, where cold nights give the juice a brisk acidity. Add to this the fact that this crémant is notably dry (extra brut), and that wines from this producer, Antech, are always very technically precise with little stabs of lemon pith, and you get the picture.
