Benefiting from cool breezes coming down from the Pyrenees, Limoux is an exciting source for wine, including this rich and creamy chenin from a well-run property. Owner Pierre Bories of Ollieux Romanis is one of our Wine Society Pioneers for their commitment to working more sustainably and the approach is largely the same at Rives Blanques. Certified organic and using lighter bottles, the major difference at Rives Blanques is their work on rootstock grafting and planting them to develop strong root structures before they’ll need to maintain the scion or have to irrigate. They then graft the scion on. It takes a lot longer in terms of production, but it means that a lot less water is used in the development of the young vine and its root structure, which is in turn stronger.
