South Australia (SA) is Australia’s wine heartland, producing most of the country's wine and boasting some of its oldest vines. The dry, hot climate ripens grapes fully, making bold, dense and concentrated wines.

The Barossa Valley has a rich viticultural history with patches of bush-trained vines, many more than 100 years old. It is first and foremost a red wine region. Shiraz is king but cabernet sauvignon, grenache and mourvèdre play an important part, too.

Nearby Langhorne is cooled by the lake and nearby sea, and grows grapes of very good quality at a low cost. These excellent-value wines are marked by a softness and fullness of flavour. The Adelaide Hills area east of the city are cool and provide the perfect ingredients for lemony sauvignon blanc and chardonnay. Coonawarra, further south-east behind the Limestone Coast, is South Australia's leading cabernet region, the unique terra rossa soil and maritime influence producing grapes with intense flavours and fabulous structure.

About a 1 ½ hour drive north from Adelaide in the Polish Hill River sub-region of the Clare Valley , you will find the home and winery of Neil and Alison Paulett, in an area blessed with a climate perfect for premium grape growing.

Plenty of winter rain, hot summers with cool nights and a lengthy ripening period make for great flavour intensity in the grapes, a fact which the Pauletts eagerly, and successfully, exploit.

Neil Paulett graduated from the Roseworthy College, Adelaide’s famous wine school, in 1971 and then worked for Penfolds and Rosemount, two of Australia’s leading companies. With a decade’s worth of experience under his belt he set up on his own with his wife Alison, having searched extensively for just the right place.

They found it at Polish Hill and bought it in 1983. The property had never been out of the hands of the previous owners’ family and had a history of grape growing that stretched back for more than a century. The estate was originally 47 hectares but the Pauletts have added a hundred more, with nearly 50 under vine, planted with shiraz and cabernet sauvignon vines over 70 years old, and riesling of 35 years. Chardonnay, sauvignon blanc and malbec are also grown.

Neil makes the wine while son Matthew, also a Roseworthy graduate, manages the vineyard, providing his Dad with the raw materials for wines of finesse and intensity that have won many awards and plaudits.

Neil and Alison Paulett bought this Clare Valley winery in 1983 and have since extended the vineyards and welcomed their son Matthew into the business. Both father and son graduated from Adelaide's famous wine school, Roseworthy, and Neil spent time at Penfolds and Rosemount before branching out on his own. This well-priced red shows off their expertise, fruit-forward and silky smooth. It's a blend of 70% Cabernet Sauvignon, 30% Merlot, and has some age to add extra complexity. Very open on the nose, with brooding, dark, hedgerow fruits and a hint of boot polish. Subtle oaking doesn't obscure the New World generosity of fruit. Great value.
