Founded in 2007 by Gao Lin and his daughter, Emma Gao. Silver Heights is a highly respected name for producing fine wine in Ningxia's East Helan Mountain region. Emma, trained in Bordeaux and is passionate about low-intervention winemaking and adopting organic and biodynamic practices. This producer is pushing the boundaries, making handcrafted wines in a high-quality wine region. This sparkling sees long chardonnay maceration, wild yeast fermentation, and minimal sulphur and filtration. A pét-nat, where the wine is bottled during fermentation and the wine isn't disgorged, leading to some cloudiness in the bottle. An intriguing and rather delightful sparkling with a pink tinge that delivers lots of peach and clementine fruit combined with florals and spice. There is an earthy and umami character on the mid palate that is a nod to the rice wine component. An exciting addition to the Chinese wine scene.
