Tio Toto Pedro Ximenez
A natural sweet wine, the result of drying Pedro Ximemez grapes outside in the sun to concentrate the sugars. The must is then partly fermented to make this luscious, rich, intensely sweet sherry with aromas of dried figs, raisins, coffee and sultanas. The palate is silky and very rich, but not cloying due to an extremely fresh finish. The ideal wine to accompany Christmas pudding or bitter chocolate mousse, yet it will also work well with blue cheeses and is heavenly when poured over vanilla ice cream. Once opened, it will keep for months.
