The seventh release in Bollinger's PN series, PN AYC 21 shines a spotlight on the Grand Cru village of Aÿ, one of Champagne's most revered pinot noir sites. Based on the 2021 vintage and enhanced by an impressive 49% reserve wines, including exceptional parcels from 2012, 2013 and 2014, (a quarter of which had been held in magnum) this is a Champagne of both precision and complexity. Aromas of ripe orchard fruit, citrus peel and white flowers lead into a palate layered with subtle notes of toasted nuts, brioche and spice. Bollinger's traditional barrel fermentation and ageing contribute gentle smoky richness and texture, while the relatively high proportion of reserve wines adds depth and harmony. Fresh, focused and beautifully balanced, with a persistent saline finish, this is a particularly elegant expression of both Aÿ and Bollinger's celebrated pinot noir style.
