A smoky chorizo that is halfway between cooking chorizo and cured chorizo in style, making it perfect for slicing and eating as it is, or using in recipes. Simply flavoured with paprika, salt and spices, then dried for two weeks, it's wonderful with Manchego and honey or olives.
