A pure, vertical expression of volcanic terroir, it comes from old ungrafted listán prieto vines planted high on the north-western slopes of Santiago del Teide at around 1,000m. Vinified in concrete tanks and open tubs, it shows crunchy cranberry and redcurrant fruit, white pepper and subtle gunflint, with soft, round tannins and a fresh, juicy palate.

Envinate

Envinate, a word coined to mean ‘wine yourself’, is the brainchild of four friends – Laura Ramos, Jose Martínez, Roberto Santana and Alfonso Torrente – who met while all four were studying oenology at university in Alicante and setting themselves up as consultants before establishing Envinate in 2008.

They have a focused philosophy centred on allowing the terroir of their vineyards to speak loud and clear by only using traditional, sustainable farming and winemaking methods. No chemicals are used in the vineyards, everything is hand-picked, the grapes (some of them whole clusters) are foot-trodden and only wild yeasts are used for the fermentation. The wines are then matured in old, neutral barrels or concrete vats and a little sulphur is only added at the time of bottling.

Currently they make wine in four diverse places – Ribeira Sacra (their first vineyard purchase), the Canary Islands, Extremadura and Almansa – each with its own winery and with each partner taking responsibility for each area.

They have purchased some land of their own but also take grapes from trusted growers of old-vine indigenous varieties. The aim is to make wines of elegance and purity, displaying the best of their vineyard land.
