Fresh and aromatic as summer pasture they may be, but whites from the Alpine foothills have the concentration to absorb hearty mountain hams and cheeses. Local grapes like jacquère and roussette are joined by chardonnay while the spicy savagnin grape lies behind Château-Chalon, a sherry-like but unfortified Jura classic.
